I am making Ed Wort's haus pale ale and it says; This ferments out very fast , so I will crash cool and keg after 1 week. What does "crash cool" mean?

It means to chill the beer so that sediment and trub will drop out of suspension. It's a way of clearing your beer up a little before you keg or bottle it. So if you have room to throw your fermenter in the fridge, that's crash cooling.
 
crash cool is to put the fermented beer into a refridgerator for a couple of days so the yeast flocks out which will clear your beer prior to bottling or kegging.
