So I am doing my first Saison with the PC 3031 yeast strain which has brett.

First question - do I open ferment this or ferment it just like any other beer?
Second: I want to add French Oak chips. Is 4oz a good amount or do I need more?

You dont need to open ferment to use wild yeasts. Just treat it like normal, but keep in mind you should probably not use that fermentor for clean beers in teh future.

4oz is a good place to start with oak chips. You can soak them in bourbon or something to sanitize them and start extracting flavor

I am glad you said that about the fermenter - I would not have thought of that.
 
Depends on the fermenter. Any plastics used in a Brett beer are probably best not used for "clean" beers in the future.

But SS and Glass can definitely be sanitized and clean beers fermented in the same container in the future.
