Hi folks. First time cider maker and have a few questions.

All of the cider I'm trying to make has been done with juice from "wild" apples that were picked from the trees, juiced and pasteurized prior to starting. I have a few batches in primary and one I transferred to secondary last weekend.

So a couple of questions and thanks in advance for any advice and input

1 - the batch in secondary was clarified with chitosan when I transferred. This caused a bunch more sediment to show up. Does this have the same effect as lees in primary and do I want to move another time? If so I know I want to minimize headspace but will lose some juice during transfer. What can I top up with?

2- one of the batches in primary did not have pectin enzyme added nor did the one above so I would like to clarify as well. Can I pop the top add the chitosan and wait a day before i transfer to secondary?

3 - being a first timer I've read lots of things and seem quite conflicting on sorbate. Do I or don't I?

4- for the batch in secondary, is it normal to still see some co2 being produced? It's very minimal but still a bit
