Hi all, not shure where to post this. I was about to bottle a 40 liter batch straight from the fermenter (As I usually do) but had some problems. First, there was a big cake of yeast floating on top; nasty, like coagulated. Anyway I removed most of it with a big spoon and then added sugar for bottling. Thing is, there was too much of that stuff floting around in the beer, and I decided not to bottle it, because it is meant to be sold. I put the fermenter on a fridge at about 10º C and left. I've built a vary basic filter using a pice of cloth and miscelaneous tubing, but I'm not sure if I should bottle now oI wait for fermentation to finish or is it OK if I bottle? I would prefer not to wait 2 weeks.
By the way, beer tasted great, it is a scottish heavy, BIAB mash; one week in the fermenter at 20º and one week at 10º.
