So I have an expired Coopers Heritage Lager I had sitting around and was wondering how it would end up with using US-04 instead of the hybrid yeast.

Would Czech Saaz also be good for adding additional flavor?
 
You'd have more of an English-flavored light pale ale. Saaz would give it flavor like a lager, since it's commonly used in those from Europe.
 
I ended up using the US-04 and just went full extract with a Briess Pilsner (first time I have done so in nearly two years...also another Coopers) to keep it simple for an after-work brew session. Got one more Coopers kit to find (somewhere in the house) and brew and never touch these things again.
