I'm trying to cool my brew pot after my boil. I can fit just over a 10lb. Bag of ice in the sink with water. I just don't want to cause any problems by having a really long cooling time before pitching.
I live in a very drought-stressed area and have been doing "no-chill" and a modified no-chill for quite some time. It works very well and I have noticed no problems with the flavor/lasting quality of the beer I have been making. Now understand, I do not brew for competition, only personal consumption. But IMO no-chill brewing is an excellent choice for those without a good chiller or who don't have an unlimited supply of cool water available for chilling their wort.
