I brewed an all-grain double IPA on March 4 and bottled it on March 25 with 2.5oz of cane sugar. This was my 10th all grain batch. The color on bottling day was what I expected of an IPA, close to the 9.0 SRM in my beeralchemy calc. I opened a bottle two weeks after bottling and it poured a murky brown and didn't smell like an IPA anymore. I opened another bottle 5 days later and it poured much closer to what an IPA should look like but it still didn't smell right. I opened up another one tonight, now 25 days since bottling and it's back to a murky brown but smells like an IPA and tastes decent too. What could cause the color change? Does it just need more time? The temps have been between 65-75 inside since bottling.
Couple things I did in this batch I haven't before include using a carbon block water filter and adding a small amount of gypsum to the water. Here is a link to two pictures of the beer.
