Now that I have the ability to cold crash my beer in the fermenters, can I cold crash for a few days to clarify, close transfer to kegs and then store them at a higher temp like 65deg?

Or, after cold crashing, do they have to remain at serving temp from then on? Mostly talking about ales and such.

You can transfer a you see fit. Crashing merely is for clearing purposes. Once clear, temp does not matter.
