My Arrogant Bastard Clone is just about finished fermenting and it's time to consider the next stage.
After a slightly disappointing experience with yeasty cloudy IPA, I've come to grips to take extra steps to ensure that I bottle clear beer. To do this, I plan to cold crash my beer in the primary for 48 hours @ 0c +/- 0.5c. I'm not worried about freezing the beer as this puppy is potentially 8% abv due to 78% efficiency. I'll know when I take a reading prior to the cold crash. Yeast to the bottom please!
After the 48 hours, if we are satisfactorily clear, I will make a transfer from my 6.5 carboy to a 5 gal carboy, dry hop in a hop sock, raise the temp to about 15.5c for 8 days (fermentation was 19.5), cold crash again for 48 hours to be rid of any hop particles and transferred trub, and finally bottle.
Does anyone see an issue with the rewarming of the beer after the first cold crash??
