This is a great recipe. I've brewed about 30 batches and this is the first recipe I feel that I need to tell you to brew. :mug:

I got the recipe from Mike over at the Mad Fermentationist. I recommend that you read the post and then read the entire blog... he does great stuff!

This is a hoppy American wheat, almost IPA like. It is about 50% white wheat which gives it a great clean and smooth body for enjoying some unique hops. The handfuls of citra and amarillo are what make the beer a real attention getter. It smells like fruit loops, it tastes like fruit loops... but there is just enough basic hop bitterness to keep this beer from being too much of a circus-freak to enjoy for a session.

I've brewed two (significant) variations:
Mash at 154: This was my first version. I loved it but wanted to try a dryer version to contrast the rich wheat body and the luscious tropical hop flavors and aromas.

Mash at 150: Yes, this is an extreme variation, however I wanted to have a definitive answer about the appropriate mash temp for this beer. This dry version is terrific. But... maybe a bit too dry. Conclusion: Mash at 152.

Before the recipe, two more comments:

Bittering Hops: For the first version I used Amarillo. This version I used Apollo. I target the same IBUs but I feel like there is a bit more sharpness to the bittering and less of the orange - but it was a few months between batches so I can't say for sure...

Fermentation: I brewed the second batch (150F mash) for a home brew event. I served it 6 days after brewing it. It was a hit. A big hit. Do you need a beer next week? Brew this, sprinkle some US-05 on it and bang... you will have a hit.

Wow, no answer to this even five years later.
Gonne give a similar a go, but going to split Amarillo and Citra on 10, hop stand and dry. Anybody tried this?
 
Just stumbled upon this thread and I have 5 gallons of this fermenting away as I type this. I changed the malt bill slightly from my normal wheat ale recipe. 50% each of 2-row and White Wheat, and I added 3% of Honey malt for a bit of color and sweetness. I did 2oz of Citra and 1oz of Amarillo in the 30 min hop stand starting at 180F Degrees and let it naturally cool to about 160F. Pitched US-05, aiming for a SRM of 4.5 and an ABV of 5%. I just dry hopped it with 2oz of Citra & 2oz of Amarillo this morning and the air lock already smells amazing. Brewed this as a test batch for my Cousin's wedding to have a nice refreshing beer on tap in July. It was fermenting at 62 degrees for the first 5 days and now I have it bumped up to 68-70 degrees to finish fermentation. I'll keg it in a week or so and report back with some photos and tasting notes. I think this one is going to be a keeper!
