I have been reading about oats being used in some ciders to give a better "mouth feel". I'm unsure what that is but I was thinking of trying it.

I have a gallon of fresh apple juice ready to make some cider and was wondering if Porridge Oats that are rolled will do anything fr the cider?

If so what is the process the oats will have to go through?

Read up on pre-mash cereal cooking. Rolled oats really need to be cooked, then mashed properly to release the useful stuff for the rest of the process. I'm not sure, but for cider made without a boil, I think you'll need to go with a three-step cereal-cook, mash, then boil - but they'll need some enzymes added to the mash for proper conversion.
