Hi all, I am doing this recipe http://www.cider-making.co.uk/cider-recipes.html/homebrew-apple-cider-recipe.html
It will be nearly a week and I will need to rack it ?? What is racking , is it just moving from the demijohn to another clean demijohn so I leave the sediment behind , I thought I could just bottle it and put a little sugar in to carbonate it , leave it for a week or so and chill, do I need to store in swarm room like larger ? Thanks in advance
 
Yes, racking is transferring the cider to a second clean container. I recommended that if you intend to age the cider before bottling, but a lot of people skip that step and bottle from primary after fermentation is complete and the cider has cleared.

You can use Splenda if you like it. I prefer Xylitol.
 
And you can use regular sugar to carbonate it. Obviously you'll need to let it sit for a few weeks at a warmer temperature so it can actually become carbonated.
