Cassava Beer

Hey guys & gals!

I live & brew in the Caribbean and cassava (here called yucca) is a omnipresent but underutilized crop. I was wondering if anyone has done research into transforming it into a delicious beer? I know SabMiller has Impala beer..

Maybe you could make something similar to pulque? That uses agave historically. Zymurgy had an article on that a few years ago.

I’d guess that cassava doesn’t have the enzymes necessary to self convert starches into sugars but you could maybe mix with some malt to provide that or add enzymes. (Or you could spit in it like chicha, but given Covid and just ewww maybe not).

Sounds like a fun thing to experiment with since it is so prominent where you live! If you do end up trying anything let us know how it turns out!

Are you trying to make cheap beer or need gluten-free beer? You can make beer from sweet potato without extra enzymes if sweet potato is available. Otherwise you could probably malt your own rice.
