I just racked my first batch of Perry to the secondary. My S.G. was 1.002. I started with a S.G. of 1.090, by my math that's 11.6% ABV. Will I be able to carbonate by adding pruning sugar or is the alcohol too high? I used nottingham ale yeast.
I brewed one at 9.5% and bottle carbed just as you would for a normal gravity brew and it worked just fine. It did need to age for nearly 6 months for the flavors to meld properly though.
I also have done a high gravity cider. It carbed with priming sugar as normal, except it took a bit longer to fully carbonate.
Since you are ideally going to be waiting a few months for the cider to age anyway, this shouldn't be a great problem.
