I'm really loving making cider and have been having fun learning as each batch is different (by design). This last batch I ended up with a ton of sediment on the bottom (expected as the juice wasn't even close to clear). It was my first time using Windsor yeast, and I'm pretty sure I ended up with yeast rafts (small sort of scaly white patches floating on the surface). I ruled out mold as it smelled great, tasted good, and didn't have any fuzz. Just for fun I poured the lees into a jar to see if I could separate more liquid and promptly forgot about it.

Now there's this lovely thick coating on the top that smells richly of yeast. Can I just scrap off the top layer and plop it into my new cider?
