Can fermentation start again after I add K sorbate?

I made my first batch off mead and I did not check for FG I just let it go a couple weeks after it was done bubbling. I know this was not smart but at the time I thought it was OK. I have added K sorbate. If I let it go 3 weeks after the addition and then bottle it, can fermentation ever start up again or did I just potentially not get as high of a ABV as I could have?

Sorbate doesn't kill the yeast, but it makes it unlikely that they'll be able to reproduce or start up again if they're already tired, which after several weeks, they should be. You'll probably be just fine bottling when you are ready.
