I have my first batch of apfelwein ready to bottle, do I use campden tablets when I put it in jugs, will it have to be refrigerated? It is not going to be bottled in wine bottles, I washed out the jugs that the juice came in and will be using those. Also, I have wine that I started with grape concentrate on september 25. It has been racked once. It is through working, but is not very clear. Can it be bottled now, or should I rack it again and wait longer?
 
Hi Tinbeers, You should not really bottle a wine until it is bright clear - that is until you can read a newspaper through the carboy. It may be cloudy or hazy because CO2 absorbed in the liquid is keeping fruit and yeast particles suspended. The idea is that you either allow the CO2 to gently be expelled from the wine over time or you can mechanically degas the wine either by raising the temperature of the wine room to about 70 F and then whipping the gas out of the wine or else by pulling a vacuum through the wine. For the latter you will need to create a vacuum of about 22 inches (+/-) .
K-meta (Campden tabs is one way to add this) is used to inhibit oxidation so most wine makers add the equivalent of 1 tab per gallon each time they rack and when they bottle.
