Cab Wine - add orange?

Been brewing beer for awhile and decided to try wine. Just bought a cab sau kit. I have some orange peel left over from a hefe i just started.

a) Can i put some of the dried orange peel in the wine to make it my own deal
b) If so, do I do it now or wait?

wait til the wine has finished fermenting, and then add some orange zest (peel). It will be quite good.
