Burned malt extract and yeast question...

Hi There,
I just brewed up my second batch of homebrew yesterday and things didn't go as smoothly as the first time :) When I went to add the malt extract I didn't get to stirring as quickly as I should have and a little bit of it burned on the bottom of the pot, is that going to greatly affect the outcome of the beer? I brewed a clone of Sierra Nevada. Second question, I was using a white labs liquid yeast which said to shake it up before adding, which I did, but when I opened it the yeast practically exploded and I think I lost about a 1/4 of the bottle. Is that going to effect the fermentation? I was planning on buying another bottle of the yeast today in case I need to pitch again, but how long should I wait to see if the yeast is working before I pitch again? One day? Two days? I think that is all my questions for now, thanks all! Cheers!

I burnt LME once (the only time I used it, DME all the way now) and it gave a black licorice flavor to my beer (which was a Belgian Dubbel)

Your beer will still ferment out but be careful with those vials, they will open with a bang!
 
If it was just a little bit burned on the pot, I wouldn't worry too much. I doubt it will have much outcome on your beer, it might be a tad darker but thats about all. As for the yeast, a little trick is to every 1/2 hr or so slowly crack the seal on the tube just so you can vent the pressure out. You don't have to take the cap completely off, but just until you hear it hiss. That way next time, no yeast shower!

Since you lost a little bit of yeast, it might take a little longer to get going, but again, you should be fine. I'd like it go at least 4 days before I'd think about repitching.
 
turn the heat off (and/or remove the pot from the burner) before adding the extract. If you scorched some on the bottom it will effect the flavor and color. How much effect is dependent on how much you scorched.

Even the full vial probably would not be enough yeast to properly ferment a standard 5 gallon batch. When using liquid yeast always make a starter. Check the mrmalty.com site for great info on making starters.

I suggest you throw in a package of safale us-05 dry yeast ASAP. If your gonna add more yeast so it right away!
