Hi, doing my first home brew using one of the Brooklyn Brew shop kits. I just bottled my beer (with the honey as the bottling sugar). I was curious, should I see any bubbles in my bottles after a day or so?
 
Probably not, maybe in a week or so. Keep them at room temp and you should be good to go in about 2 weeks. I was never very patient though and would open one after the first week just to see where they were at.

Keep in mind that you will most likely not actually see bubbles rising like in a poured glass unless you either shake the bottle or pop the cap. The carbonation should all be in solution.
 
The typical rule of thumb is that it takes three weeks at 70 degrees for your bottles to fully carb up. Bigger beers or lower temperatures can take longer.

Honey can also add to that time - it's one of the slower fermenting priming sugars.

Note that once the time period is done, it's usually best to put your beer in the fridge for a couple of days (some advocate as long as two weeks). That helps get a little more CO2 into solution, which will give you longer lasting carbonation when you open a bottle.
