Since I have just pieced together my own brew-system, and don't yet know the efficiency of it and my grain/crush yet, am I better off estimating the efficiency on the high side or the low side?
 
I would estimate it on the low side. It strikes me that it is better for your beer to be stronger than you anticipated than weaker.
 
Figure 65-70% for your first one. You can always dilute to bring it down to your target gravity and you end up with more beer! Just remember to adjust your hops if you end up with more wort in the kettle.
