Hey guys, didn't want to resurrect an old thread similar to this, but I just tasted my Brewer's Best Amber and I have to say I am a little bit disappointed. It is hard to put my finger on the flavor, but "bitter" and "off" seem to be descriptive.

Here's where it is at:
1 week primary
2 weeks secondary
1 week bottles

Yeah I know it is a little bit early for the carbonation to be complete... but still hesitant with the strange flavor.
Will bottle conditioning really save this beer? :confused:
 
One week in bottles is very early to critique the flavor, as it is still very green. Try it in another two weeks and see what it tastes like then.

Alright, second week, carbonation is there! I'll say the taste has definitely improved, still a light amount of something too bitter and off, maybe some fussel alcohols? The fermentation was likely a little too hot.

Anyways, thought I'd give some follow up on my previous post!

Fusel alcohols would not really be described as "bitter" or "off".

More along the lines of "hot"....
Think rubbing alcohol.
Almost "hot" to the tongue and palate.

For me personally, anything Amber and darker needs the full 2-3 weeks conditioning, followed by 5 day minimum (7-10 days is better) in the fridge.
More complex flavors need to blend together.

Well after giving this beer numerous tries and conditioning tips and tricks, I still get a mix of reviews from friends and beer drinkers. Some hate it, some love it, I don't rather care for it.

My next batches came out great so I'm going to chalk this one up to high fermentation temperature, since I swamp cooled everything but the Amber.

Anyways, thanks for the help and tricks guys!
