Brew day finally arrived. I brewed Hank's Hefeweizen extract kit and everything went according to plan. After scouring this forum for a couple of weeks, I was able to jot down a game plan that allowed me to brew with no surprises. I even hit my target temp for pitching yeast with no difficulty. Now we play the waiting game.
 
I'm right there with you. I just finished my first brew this past weekend, and I'm now in the same waiting stage. I already have all the ingredients for a second batch, so I may not actually wait too long...
 
Woke up this morning and went downstairs like a kid at Christmas......and was rewarded with the sound of my airlock happily bubbling away. Can't wait.
 
Hank's Hefeweizen was my extract kit. This is my favorite style of beer from my time living in Germany. Now I'm on a quest to hone some skills and try to mimic my 3 favorite weissens from Tucher, Patrizier and Kitzmann. Anyone stationed with the 1st Armored can back my up on those.

We got that you have an extract kit. The question is how did you make it? What all did you put into it? What was your process?

I've been brewing 6 or so years now and I still get excited when I get downstairs and see the airlock bubbling and krausen beginning to form.

Nothing unusual about my process. Since I have no experience and I'm trying to not develop too many bad habits, I jotted down the instructions from the kit, then I googled how others had brewed this kit. For example, at first I was inclined to do a partial boil. But, after reading many other posts, I purchased a big enough pot to do a full boil with plenty of headroom for boil overs. I also picked up a Ranco temp controller and turned an old chest freezer into a fermenting chamber because many said they had great luck fermenting in the low 60's. My basement sits in the 70's and in the future I would like to brew lagers so I'll need the cooler options. Other than that I followed the temp/time guidelines in the kit.
 
I used to live in Erlangen and remember those great breweries (Patrizier, Tucher, and Kitzmann). I have been looking for a clone of Kitzmann's Jubilaums beer. Does anyone have any ideas for a recipe for that beer?
