Was wondering if 7.5 gallon pot would be big enough to do a brew in a bag looking to step up from extract and do maybe a hefeweisen not quite sure

A full 5 gal batch might be tough, but depends on the grain bill .. I.e., how much water will you displace when adding x pounds of grist.

You might want to mash in a smaller volume of water ( versus typical full volume BIAB ) and rinse ( sparge ) in a separate kettle (or cooler or bucket). Then combine the two for your boil.

Any ideas with doing it that way I don't really have a recipe I guess what I'm asking is how much water in each I had a recipe for extract but not grain

7.5 gal kettle is fine for extract ... you usually boil 2.5 to 3.5 gal and then top of with cooled clean water to get to 5
 
I've been doing like 4-4.5 to get a little bit better quality I tried 5 but had a small boilover

8 gal kettle and I do full 5 gal batches. Keep a sprayer of cool water to knock down boilovers till you get a good hot break and you will be fine. I would sparge with a 7.5 gal pot.
 
I get it now - sorry to have misunderstood Travis. You were doing extract and you want to move to BIAB. Yes? mb82 has the right tip .. keep the spray bottle handy. You could also scale a recipe down to 4 gallons and probably have enough kettle space.
 
Ok and thank you for the late extract addition I always followed a kit recipe which never mentioned that maybe I'll do a couple batches that way and see what I get out of it
