Went a little brazen by going with tons of late Apollo & Summit.

13 lbs Pearl Malt
1.5 lbs Flaked Oats
0.5 lbs Ground Up Flaked Oats
1.0 lbs Flaked Wheat
0.25 lbs Carafoam

I’m anxious too see the impact of grinding a half pound of Flaked Oats as well as the addition of a pound of flaked wheat. I noticed a lot more protein in the boil and the wort is considerably cloudier than the NEIPA I brewed two weeks ago where I didn’t have the wheat and ground oats. There was a film of protein on the entire boil.
 
I’ve never heard of anyone using the Ringwood strain for fermenting a NEIPA. I’ve been scared away by its tendency to stall and throw off a lot of diacetyl. You might want to soft crash (lower to 50-60F) the beer after fermentation and prior to dry hopping to prevent hop creep, because dry hops will promote diacetyl production.
 
This is definitely an experiment in the style. I chose that British strain trying to be different knowing that it can accentuate malt character. I’m hoping it helps bring the oat notes through despite it being a good flocculator and not being super estery. Apollo and Summit combo is pretty unique to the style too. This chilled wort is a crazy hazy hop bomb on the nose. I’m pretty excited to see what I have here.
