Has anyone used (or thought of using) braided stainless steel tubing (like a supply line for an ice machine) instead of bent SS for the coil in a jockey box? Looks much cheaper and should be food grade... thoughts?

Heat transfer will not be the same. Those braided lines have a plastic tube inside of them. The purpose of the coiled stainless line is to have lots of surface in contact with the ice.
