So a few weeks ago I decided to try a bouchet mead..saw a recipe that called for 4.5 lbs of honey cooked for 1 hour, I also made a “tea” with lemon and orange peels and added that along with the little bit of water...so long story short, I went into the basement to check on it and I notice some odd stringy like stuff floating around. It appears to be sinking to the bottom. I don’t know if this is bad or not. Some people have suggested to shake gently and agitate it. Idk so I came here haha. It’s been fermenting strong for like 3 weeks

In the beer world we call it trub. You can call it scum, lees, whatever you want. I think you'll be fine once it all settles out.
