I was wondering made a American wheat ale had it ferment in bucket for one week took gravity stayed same for 2 days tasted good no high alchol flavor or smell t ransfered to secondary glass carboy gave it another week then took reading stayed same 1.01 so I then bottled it I got inpatient and after 3 days cracked one open recipe said to wait 1 week and after 3 days some carbonation but not much but it smelled a little like rubbing alchol and tasted a little different then what it did when I bottled it my question is do I have a bad batch or do I let it sit for 4 more days then try it. Also worried I could get sick or something I pitched the yeast at 70 degrees into wort and fermented in basement at approx 70 degrees I did stir my priming sugar a little bit to please let me know. Thanks. Also used star san .

Well 2 weeks is what your wheat needs to carbonate and age. I would continue to taste it every three days or so. After three weeks it should be as ready as it will get unless you have off flavors. You Palate might find it more enjoyable on a different day. I know that I can't trust my taste to be the same all of the time.

first off, you're not gonna die.... at least not from drinking this beer.

You kinda rushed things. And fermented a little warmish. And racked to secondary for no reason. And stirred.

Is your rubbing alcohol flavor more like a bandaid?

A few mistakes - since you're getting some unpleasant flavors, I'd suggest giving it a full 3 weeks from bottling day, then put some in the fridge for at least two days, then try it again. Good luck.

hcb, you should've opened this in the beginner's forum. You'll probably get more responses. Pete
