Hi all. I've just finished a ginger beer brew (5%) and I'm a bit stuck as what to do next. It is still in its primary and fermentation has finished. I need too:

1) sweeten the brew
2) bottle ferment

So my questions are

1) What can I use to sweeten the brew (I assume some kind of non fermentable sugar)

2) what is the best way to bottle ferment? Rack clear from primary first? I used a calculator that says 198g sugar for 15litres @ 4 volumes co2. Do I make a starter with fresh yeast, then add all together and bottle?

I have posted this in a couple of places as wasn't sure where to do it....Hope this all makes sense.
