I'm telling you guys, this thread is one millimeter from getting locked!

Thanks. I'll post pictures, just cause, tomorrow if this thread manages to not get locked before then.

Now off to start tonight's ribs! Finally got a decent rib rack...

I love a nice firm rack.

Here is the first I pulled - fat side down. This was before I pulled it. Like I said, it literally fell apart... Thats the bone there in the back.

Looks amazing...makes me real happy that I've got a big hunk of the stuff in my fridge, just waiting for me to get home.

Nice! The slight sourness of the vinegar balances out the smoky sweetness of the pork. It's very thin, but works great with the pork, which already has such a rich and sticky texture. (Sticky isn't the right word...but I'm sure you know what I mean!) I had to substitute light brown sugar for the turbinado, but I think it's still close to your intent. Got it in a "Bobby Flay" style squeeze bottle, ready for next time.

I'm not a big fan of smoked beers, but I wonder if a smoked porter would be a good match? Or would it be a bit overwhelming? Hmnn...

Glad you like it. Ya gotta shake it before squirting to get the cayenne & chipotle spices into solution. The heat & vinegar make the sandwich IMHO. Lots of folks are turned off by vinegar, but the ones that try it come back for more.

Smoked porter would be a good last beer of the meal for me.

I forgot to mention I whipped up some of your sauce yesterday - although, in haste, I doubled the Chipolte. Its very addictive stuff!

Sweet! I bet that kicked in the afterburner about 10 seconds after your first bite!! I love the delayed heat in Chipotle peppers. :rockin:
