i brewed an all-grain blue moon on sat the 13 . the o.g. was 1.040 , the fermenter was really going fast for first 10 to 12 hours and now it has stopped. did a gravity check and it read 1.025. any suggestions?
 
Yeast type?

Fermentation temperature?

Mash temperature?

Grain bill?
 
5lbs 2 row pale malt,2.75lbs unmalted white wheat, 1lb flaked oats.wyeast 3944. fermentation temp 72,mash temp 155 for 1 hour.
 
I would guess that the combination of mash temp and unmalted wheat gave you a few unfermentables, I would expect it to drop to about 1.020 in the next week then be finished.
