Y Elderberry has finished and is bottled, I had a little taste, it has a titre taste to it as an after taste. Is this something that will mellow after time? As it has only been finished about a month. Or does it need back sweetening? If so how do I do that?
 
The wine is extremely young/green, it will take several months to start to mellow out, personally I would have bulk aged this wine for several months before tasting and deciding it you needed to make any adjustments prior to bottling.

Ok thanks for that, it wad my first full home brew so you learn as you go, I am making another from grapes at the moment so might just leave that in the barrel for a lot longer before bottling.
