So... who is doing the turkey this year? i have it at my house every year. up at 5:00, stuff the li'l chit then back to bed. think i'm going to smoke a hen as well ... :D
 
Doing dinner so I can sleep in. Doing a stuffed whole turkey in the oven and a turkey breast on the Big Steel Keg.
 
I'll do a ham on the kettle grill and hang the turkey PBC-style on the WSM. I will also do mashed potatoes, corn, greens, sweet potatoes, noodles gravy and stuffing. The friends and family will bring everything else but if we have any no-shows we will still rock Thanksgiving.
 
I do duck instead of turkey. Braise the legs and thighs in leeks, dried cherries and Belgian Dark ale. Mmmmmmmm

The breasts get a quick sear in a screaming hot pan until medium rare.

Roasted root veggies, and brussel sprouts, to round out the meal.
 
17 lb turkey, wrapped in foil, cooked on low temperature for several hours, and then finished at high to brown uncovered. Always delish.
 
Took mine out of the brine a few hours ago. Vacuum sealed it in a bag with all the good stuff. It'll go on the smoker around 6. I volunteered for Turkey duty and did my usual bourbon pecan pie.
 
Our 8 pounder (only two of us) is going into the oven shortly.
We raised 5 Bourbon Red's and this was the smallest of the gang.
Can't wait to dig in!
