Big head, low carb

I am brewing up another strout, this time a dry stout, and i want to get a really nice, thick, big head but i want to keep it lightly carbonated. should i just carbonate normally and pour really aggressivley or use malto-dextrin or something like that?
 
I would recommend against maltodextrin in a dry stout, it may make the body a little fuller than is desirable for the style. Many dry stouts include flaked barley, oats, rye, or wheat which will contribute to lots of head. (Guinness for example uses flaked barley)
