When you reach the ideal temperature for the malt mixture should turn off the heat and keep in mild temperatura?
 
The goal is to maintain a consistent mash temperature. If you need to apply heat to do so, then do it. If you don't need to apply any more heat, sit down and drink a beer instead?
 
I understand this but a time that I'm mulling the chosen temperature and closing the pot must stay with the fire off? Or keep on low heat?
 
Easiest is to heat water 6-8F degrees above mash temp, add grain, stir and insulate / wrap kettle w blanket to keep temp reasonably constant.

With a little practice, you don't need to add heat during the mash.
