In the majority of recipes, it is recommended to use eight tea bags to a gallon of water. The way I am using the kombucha, it comes out to having ½ a tea bag per day. To me this seems like a very small amount of the actual ingredients of the tea itself. ----- Question: Would it be more beneficial and healthy to use more tea bags in order to get more of the benefits of tea?

Just came across your query. Here's my 2 cent's worth:
Quantity of tea would depend on the quality of tea and the process it has undergone.
I use 50gms of loose tea leaves per gallon of water and I seem to get reasonably good results. I also have mixed 2 variants of tea like Ceylon tea+ earl grey to get a good results. My only precaution is I don't pitch in the tea when the water is boiling but wait for it to come down to 70-80 C before adding the tea to steep.
