So my girlfriend was asking me if I could brew her a beer similar to Lost Coast Great White. I've been searching around for a while trying to find an accurate recipe and there's one on hopville that seems like it could be close. I would probable make some changes to the grain bill as a lot of that seems pointless, ie the Vienna Malt and Honey Malt, maybe even the Carapils.

I was just curious about the yeast choice because I figured a Belgian Wit would be heavily reliant on using a belgian yeast strain. However, she doesn't enjoy the belgian flavors, but Great White is one of her favorites, so it would make sense that it's not made with a Wit strain. Has anyone ever made a beer similar to this?
I like the use of Centennial and Cascade, but I feel that they wouldn't do much to accentuate the addition of Corriander, Chamomile, and Orange zest. I also saw a few people saying to substitute Kaffir lime leaf for the Chamomile. Any feedback would be appreciated.
