I was in Vt not too long ago and went to the Madison Brewing Company in Bennington...anyways i had a conversation about Wits with the brew master and he suggested putting some Belgian Candied sugar in my wit. Has anyone ever done this or heard of it? If so how much and when should i add(Late addition?) Here's my simple wit recipe.
1# Flaked wheat(steep 20min @155)
5# extra Lt DME
2.5#Orange Blossom honey
1oz Hallertau(60min)
.5oz Hallertau(15min)
1oz Coriander(1/2 boil 10min; 1/2steep 10min)
1oz Bitter orange peel(steep 10min)
WLP400

I've brewed it several time and its a crowd pleaser.
