I'm getting some very low sparge volume numbers and think it could be my equipment profile. I'm using the High Gravity EBC III with three 10 gallon stainless steel brew pots. I've attached a pic of the brew setup and my profile. Any help would be greatly appreciated.

Upping the batch volume to 5.75 so that you get a bottling volume of 5 gallons might work. That's where I'd start, anyway.
 
...but then I see post boil volume of 6.5, so now i'm less confident. To be honest, I use a separate calculator for my mash temps and measurement. I use the My Sparge Pal iPhone app.
 
Increase your boil volume. I set mine to 7.5 gal for my 10 gal pot and my batch volume to 6 gal. I do a double batch sparge and get back what i need with just a little extra left over. I boil off about 1.3 which give me just enough to put 5.5 gals into my fermenter
 
It seems that on that screen it is trying to give you a two gallon batch. Change your equipment profile to a 10 gallon boil pot??

Also you have zero mash tun dead space. That would account for a quart or two.
 
It's calculating for 2 gallons post boil because you have 3 gallons of top up water in the fermenter listed. You need to remove that then it will go toward your sparge.
