I know it’s an age old question, should I or shouldn’t I use beer yeast to brew mead . I’m not interested in that answer since of course it’s possible. The question I pose is what beer yeast when using it for mead provides the best flavor, and ease of clearing? What has the most interesting and flavorful texture and mouthfeel?
 
Check the bomm thread in the mead forum. Bray did experiments with multiple beer yeasts and shared his experience on his homepage. The links are in the thread. You can find everything within the last 4 or 5 pages.

I used cbc1 for my last mead and got it up to 23%, which wasn't the plan. :D
 
23%? Mmmm , thank you for the fast answers, but gimme some more forum responses, I know brays is the wündermaster of beer yeasts and mead but I know some of you make better stuff, any beer yeasts that respond well to spices? Or enhances the flavor of say, star anise ? Cinnamon? Cloves?
