I tried my first batch today and it has a sort of white wine aftertaste. there is also no head retention. It has been in the bottle three weeks. It is a brewers best american amber ale. It came with nottingham yeast. The thermometer that sticks to the side of the bucket read 66 to 68* every day it was fermenting.:(

Your beer is still awfully young, so give it a few more weeks to mature. True story, I brewed an AHS Honey Blonde that after only 3 weeks was very wine-like and kinda sour. a few weeks later it mellowed into a marvelous beer. Give it time, and it will be delicious.
