Going to attempt brewing up a clone of 21st Amendments Bitter American. Recipe calls for Golden Promise pale malt as it's base, but I was considering using Maris Otter in its place. Any thoughts? Also, I was thinking of adding just a touch of Sorachi hops to give it a hint of lemon. Any advice would be welcome!
 
In a blind taste test I bet 90% of people could not correctly identify the difference between GP and MO. (Yes I am sure some folks HERE can but generally speaking... ;)

As for the extra hop additions I have no real input on that. If you want a subtle lemon you may want to check out Brambling Cross. I have used that with good results as Soraci Ace can be a bit harder/pricier to source.

Any reason switching base malts? I find that subbing will create a different beer other than the clone-often.I would stick to the recipe unless you dont care if its different.You may or may not think its different,and sometimes it could be even better as well.:mug:
 
Maris Otter has more of a cracker flavor than Golden Promise. They are both very good but the final product will be a bit different. A trained palate will pick it up but most people would never know, as already stated.
