hey guys, so I am trying to put together a big brew with my home-made malt. I'd like to do it with 100% home-made, but since it's my first go at a barley wine/big brew, I thought I'd throw in a bit of DME and Sugar to help me out. Here's the recipe. Hoping to come in at 10% abv or so..Comments? Ideas?
12 liter. mostly-grain barley wine
Grain and Such:
8 lbs, home-made base malt
1.5lb DME
1.5 lb honey or sugar
½ lb crystal malt,
2 oz. chocolate malt
Hops:
1oz hautener, (60 min)
1oz kent goldings (60 min)
Yeast:
Wyeast belgien abbey 2 (in primary)
Champagne Yeast (in primary after 7 days)
Notes:
Mash with 10L water, Sparge with 6L or so for 12L final volume. Plan on leaving in the primary for 2 weeks, and secondary for 2-3, depending on the Gravity reading. Bottle with 1/3 cup white sugar.
