So I made a cider with maple syrup over a year ago. It's been sitting downstairs bulk aging after a few rackings and the addition of sorbate and campden. At least according to my records. I recently got around to bottling it. It tasted nice...real nice. I added a little sugar to it. Today (a few weeks after bottling) I got the news of a popped cork. Sure enough another one on it's way. Not sure what I did wrong but it's depressing. I must have forgotten to add the chemicals and just have written it down in my records. I guess I will just have to chill it and get it in somebodies stomach soon.
