I know that Hefe's are best when consumed young. I also know that there really is no need to secondary a Hefe. With that said, what would be the shortest time that you guys would consider, kegging, carbonating and serving a Hefe?

Thanks chill, that's what I was thinking too. It's at 7 days today. I just took a gravity sample and it's down to 1.012 from an OG of 1.052. I'm happy with 76% attenuation, and it's still nice and cloudy with yeast. I'll check it again at the 10 day mark on Tuesday, keg it, chill it and carbonate it.
