Whew, of all days to join this forum, certainly can't beat Brewpastor in the tech dept. Oddly enough I was going to use RevChas as user name but decided it would be best to be just Charlie. I also own/race Triumphs (cars) and do a lot of formula 500 racing in SCCA.

I've fermented since the mid 1960's; lots of high octane paint thinner that actually tasted ok back then. Began all grain and meads in the late '80's. In fact, I'm sipping some 12 yr. old bulk aged mead as I write, so please be prepared for some typos.

I typically brew 1/2-1 bbl in a session, 90% lagers until this year. Mostly triple decoction. This year I'm concentrating on ales... still searching for the right animal to give my bierre de garde that perfect fart-in-the-saddle mustiness I crave.

I went to seminary on the southside, Hyde Park to be exact. McCormick Seminary, class of '86.

Triple decotions, nothing taste better! And Triumphs. We got spend too much time sharing tales of darkness thanks to Lucas.

Welcome to the forum! We will definitely appreciate the experience you bring.

12 year old mead? Wow! that is impressive! I don't yet even know what 12 week old mead tastes like.
