I'm looking for advice on how I would go about carbing a keg that's going to be sitting in a cold room. I wont be able to keep it in the fridge, as i've got 2 on the go...so my game plan is to keg it, hook up the extra co2 tank and just set it to 12psi until i need it (roughly 2-3 weeks?) will this work, is there a better idea?

cold room temp is cool enough to keep pop cold enough to grab and drink, but an exact temp is unknown.

Close enough. If you can find out the temperature, then you could increase the pressure a bit to compensate.
