Heres the deal, I have a lot of roasted barley, chocolate, speciality smoked, and victory grains that i want to use up. So I think I am going to make a stout. I also have 6 lbs of unused amber malt extract sitting around. Would it make a difference if I use amber malt extract instead of a more common extract?

The only problem is that amber extract was made with grains you may not want in your beer, like crystal, or whatever. Try to determine what's in it, then see if that's okay in your stout.

I used 3lbs of plain amber DME in a dark ale once. Smooth & creamy with some roastiness on the back. In a stout,I think it would work in much the same way. But to a lesser dgree, leaving more roasty, chocolate, etc flavors.

I used amber lme in my RIS (13.2 lbs) and came out great. It's got some crystal in it, not sure which one, but some stout recipes have different crystal in it. I'd go for it. If it were me, I'd get another 3 lbs of light dme to have a nice winter warming stout. :)
