I have a True Brew Amber Ale kit I am thinking about experminting with. My idea is to do a regular batch like you would any other kit only instead of topping off my 3 gallons of wort with water I would like to use 2 gallons of apple cider to make 5 gallons. Anyone ever tried this or heard of it before? Anyone have any thoughts of what it might turn into? This will only be my second batch so I am still very new to home brewing. Also what do you think about adding a stick or two of cinnamon to the secondary for this beer. Any thoughts, warnings, suggestions anyone might have would be greatly appreciated.
 
You would essentially be making graff or apple beer. There are a few recipes floating around on here. Only warning I have is to try and get beer with out preservatives, they dont like to ferment AS WELL. Potassium sorbate is the big one, but ascorbic acid (vitamin c) it also used. Now I have used apple juice with ascorbic acid and it has worked fine but others have said it doesnt work as well. I say go for the cinnamon sticks, then try and keep some of it for the fall.
 
I will look up graff and read what I can on it. I can get fresh cider with no preservatives and has been pasturized so i should be ok there. And yes with the cinnamon in it i was thinking this could make a nice beer for the fall.
