:ban: I am about to come into an oz of fresh Amarillo from 2010 which was brought over to Thailand by a guy I know.He is swapping it,along with an oz of Cascade and an oz of Cluster.
I want to work the Amarillo into my Coopers Australian pale ale kit:D,
any ideas on how to go about it?

So, I wouldn't usually boil a kit.Do you think just boil the entire kit for ten mins to make sure no nasties come from the hops.Or boil just a bit of it?

You don't want to boil a pre-hopped kit, you'll drive off what little flavor and aroma is in it.

When you use hops, you have to boil them to get alpha acid conversion.

What you could do is a hop tea--boil the oz in a couple of cups (half-liter) of water for 5 minutes, run the result through a strainer (or coffee filter), and add to the fermenter before pitching the yeast.

If you happen to have any DME around, you could add 50g of that to the 500ml of water to make it closer to regular wort gravity.

Could I throw in some dextrose with the hops for the boil?
 
You could throw in some dextrose if you want, but it's going to ferment out completely and dry out the final product (depending on how much you put in). Not necessarily a bad thing, though.
 
I was thinking just 250gr in the hope of helping with head retention.

So what I did is boil 250gr dex and 250gr sucr.
I added 1/3 oz Amarillo at 15min, 1/3 at 8 min and 1/3 at 1-2 min.
I also had some bits left over,so in they went on top.
It has been in primary for 6 days and smells like heaven!
